Stem Ginger & Dark Chocolate Ice Cream Sandwiches



Indulge in the perfect combination of spicy-sweet stem ginger cookies and rich dark chocolate ice cream with these delightful sandwiches. They're a refreshing treat for any occasion, blending the warmth of ginger with the coolness of chocolate.

Ingredients:

  • 8 stem ginger cookies
  • 1 pint dark chocolate ice cream

Instructions:

Take out the dark chocolate ice cream from the freezer and allow it to soften slightly

Place a scoop of ice cream onto the flat side of a stem ginger cookie

Top it with another stem ginger cookie, flat side down, to create a sandwich

Repeat with the remaining cookies and ice cream

If desired, roll the edges of the sandwiches in chopped nuts or chocolate shavings for added texture and flavor

Wrap each sandwich individually in parchment paper or plastic wrap and freeze for at least 1 hour before serving
