Creamy Vegan Pasta



Enjoy a vegan pasta dish that is rich in flavor and texture and very creamy. The sauce in this dish is made from cashews and has hints of garlic and lemon. It goes perfectly with your favorite pasta for a filling meal.

Ingredients:

  • 250g pasta of your choice
  • 1 cup raw cashews, soaked in water for at least 4 hours
  • 1 cup unsweetened almond milk
  • 2 cloves garlic, minced
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh parsley, for garnish optional

Instructions:

Cook pasta according to package instructions until al dente

Drain and set aside

In a blender, combine soaked cashews, almond milk, minced garlic, nutritional yeast, lemon juice, olive oil, onion powder, salt, and black pepper

Blend until smooth and creamy

In a large skillet, heat the creamy sauce over medium heat until warmed through, stirring occasionally

Add the cooked pasta to the skillet with the creamy sauce

Toss until the pasta is well coated

Serve hot, garnished with fresh parsley if desired
