Instant Pot Pasta Fagioli Soup
This hearty and tasty Pasta Fagioli Soup is easy to make in the Instant Pot. Great for a meal that makes you feel better on a busy day.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cans 15 oz each diced tomatoes
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz cannellini beans, drained and rinsed
- 4 cups beef broth
- 2 cups water
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup ditalini pasta
- 1 cup fresh spinach, chopped
- Grated Parmesan cheese for serving
Instructions:
Put the Instant Pot in saut mode and brown the ground beef until it's done
Get rid of extra fat
Put in the garlic and onions, and cook until the onions become clear
Add diced tomatoes, kidney beans, cannellini beans, oregano, basil, thyme, salt, and pepper, along with the beef broth and water
Stir the ingredients together
Put the lid on the Instant Pot and set it to high pressure for 8 minutes
Quickly let go of the pressure, then carefully open the lid
Put the Instant Pot in saut mode and add the ditalini pasta
Stir the pasta in and cook until it is soft
Put in fresh spinach and cook it until it wilts
Grate some Parmesan cheese on top and serve hot
